- 3 Eggplant
- 3 Potatoes
- 2 Banana
- 1/3 cup Indian Flat Beans (papdi)
- 2 tbsp Green Peas
- 2 tbsp Pigeon pea seeds (Tuvar)
- 1 tbsp Ginger Paste
- 4 Green Chilies
- 1 tbsp Ajwain
- 2 tbsp vegetable oil
- 1/2 tbsp Red Chilli Powder
- 1 tsp Turmeric Powder
- Salt
- 1/4 cup Coriander Leaves
- 1 tbsp coconut
- Ghee / Saturated Butter

Wash and cut all the vegetables in cube size.

In a mixing bowl add oil, ginger paste,green chilies, salt, turmeric powder, red chili powder, ajwain mix well.

Coat the vegetables nicely with the marination.

Now take a baking tray, add vegetables, cover it with foil and bake it for 40 minutes at 180 degree.

Once done, for smokey taste remove foil and put hot coal, add in ghee and cover it for few minutes.

Garnish it with coriander leaves and fresh grated coconut.
